The Best Mars Chocolate Bars

Ingredients

Nougat (first layer)

  • 1/2 cup raw almonds (soaked in water for at least 4 hours)
  • 1/2 cup raw cashew nuts (soaked in water for at least 4 hours)
  • 2 tbsp agave syrup
  • 1 tbsp organic Lucuma powder (optional, but recommended for caramel-like flavor)
  • 1-2 tbsp water

Caramel (second layer)

  • 1 tbsp almond butter
  • 2 tbsp agave syrup
  • 1 tbsp melted coconut oil
  • 2 tbsp water
  • 10 medjool dates
  • 1/2 tsp vanilla extract
  • pinch of salt

Chocolate layer

  • 1/2 cup melted coconut oil
  • 1/3 cup cocoa powder
  • 1/4 cup maple syrup (or agave syrup)
  • 1/2 tsp vanilla extract

Instructions

  • These mars bars are raw, so line any 8 x 8 or deep dish pan with parchment paper and put aside.
  • Remove the water from the soaking nuts, wash them with clean water and add them to a food processor. Add all nougat-layer ingredients into the food processor as well.
  • Process until you get a creamy and smooth texture. Add the first layer into the pan and press with a spatula to make it even. Add it in the fridge while preparing the second layer.
  • Prepare the caramel layer by adding all ingredients into a food processor and blend until smooth and creamy. Add the second layer on top of the nougat layer, again make it even using a spoon or a spatula.
  • Add it in the freezer for 15 minutes, or in the fridge for an hour to completely set and thicken.
  • For the chocolate layer, add all ingredients into a small bowl and mix until combined and no cocoa lumps are visible.
  • When the bars are completely thickened and combined, cut them into small bars.
  • Cover each bar in the chocolate mixture and put them in the fridge to firm.
  • You can keep the bars in the fridge for up to 2 weeks, or in the freezer for up to 2 months.
  • Before serving take them out of the freezer as they only need a couple of minutes and they are ready to be eaten!
