Soak the cashews and dates at least 2 hours before you make the ice cream. If you use medjool dates there's no need to soak them in water as these dates are a lot more creamier.
Add alll ingredients into a high-speed blender, or a food processor and blend until everything is combined and thick.
Pour this mixture into ice-cream molds and freeze for at least 3 hours.
Decorate with melted chocolate on top and enjoy!
