In a medium bowl, mix coconut milk, chia seeds, brown sugar, maple syrup, and cinnamon until they combine.
Set aside for 10 minutes, and stir again to break up any clumps of chia seeds. Add in the apple.
Cover with a plastic wrap and let it in the refrigerator for 2 hours, or overnight.
When ready to serve, portion out 4 equal servings.
Sprinkle some graham crackers on top, cinnamon sprinkles, or apples.
