Beet and Sage Bean Dip

This amazing beet and sage bean dip is flavorful, earthy, and slightly sweet from the roasted beets and garlic.

Ingredients

  • 1 1/2 medium beets roasted and cubed
  • 1 can cannellini beans rinsed
  • 3 roasted garlic cloves
  • 1/2 tbsp avocado oil or olive oil
  • 2 tbsp tahini
  • juice of half a lemon
  • 10 fresh sage leaves, or 1 tbsp. dried sage
  • 1 tsp paprika
  • salt and pepper to taste

Instructions

  • Preheat oven to 400F. Place cubed beets and garlic on a baking sheet and toss with oil. Roast for 20 min. Pulse all ingredients together in a food processor.
