Carrot Cake Protein Overnight Oats

Ingredients

  • 3/4 cup almond milk
  • 1/2 cup Greek yogurt
  • 1 carrot
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 2 tbsp maple syrup or honey (or agave syrup)
  • 1 cup old fashioned oats
  • 1/4 tsp salt
  • 1/4 cup protein powder (I used vanilla flavored)

Instructions

  • Grate the carrot first. In a bowl mix all of the ingredients until combined.
  • Get two separate jars and divide the mixture equally in both jars.
  • Cover and refrigerate for at least an hour (ideally overnight).
  • Before serving top with some crushed nuts, cinnamon, low-sugar syrup, or coconut flakes.
  • Serve either cold or heated. Enjoy!
