Cookie Dough Smoothie Bowl

Ingredients

  • 2 cups frozen cauliflower florets
  • 3 Medjool dates pitted
  • 2 tbsp creamy peanut butter (or cashew butter)
  • 1 tbsp vanilla extract
  • 1 banana
  • 2 tbsp chia seeds
  • 1/8 tsp sea salt
  • 1/2 cup non-dairy milk (of choice)
  • 2 tbsp toasted peanuts, plus more for topping
  • a small handful of dark chocolate chips (optional, for topping)

Instructions

  • In a blender add all ingredients (except for the peanuts) and blend until smooth and creamy.
  • Serve in a bowl topped with some dark chocolate chips, some peanuts and an extra drizzle of peanut or cashew butter.
