Cut all the vegetables into small cubes, pour water over them and add the two soup cubes.
Boil the vegetables for 10 minutes, or until they soften nicely. Then remove from the heat and blend with a hand blender for a few minutes until you get a creamy mixture.
Then return the pot to the heat and add the amaranth, cook for another 7-10 minutes. Finally add chopped parsley, pepper and salt if desired.
