Creamy Vegetable and Amaranth Soup

Ingredients

  • 1 cup fresh broccoli
  • 1 cup fresh cauliflower
  • 1 zucchini
  • 1 medium potato
  • 2-3 carrots
  • 50 gr amaranth
  • 2 vegetable Bouillon cubes
  • 1/4 cup chopped parsley
  • 1 liter water
  • salt and pepper

Instructions

  • Cut all the vegetables into small cubes, pour water over them and add the two soup cubes.
  • Boil the vegetables for 10 minutes, or until they soften nicely. Then remove from the heat and blend with a hand blender for a few minutes until you get a creamy mixture.
  • Then return the pot to the heat and add the amaranth, cook for another 7-10 minutes. Finally add chopped parsley, pepper and salt if desired.
  • Serve this soup warm! Enjoy!
