Crunchy Carrot Salad

Ingredients

  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 2 tsp maple syrup
  • 1/4 tsp sea salt
  • ground pepper
  • 4 cups carrots (shredded)
  • 2 green onions (chopped)
  • handful of fresh parsley
  • 1/2 cup raisins (optional)
  • 1/2 cup pecans (optional)

Instructions

  • In a big bowl add the olive oil, lemon juice, maple syrup, mustard, salt and pepper and mix well.
  • Add the carrots, green onions, and parsley and stir well.
  • Taste and adjust if more seasoning is needed.
  • Add the toppings of choice and serve. Enjoy!
