Delicious Egg Roll in a Bowl

Ingredients

  • 1 lb ground chicken (sub: turkey if you don't have chicken)
  • 2 tsp fresh or dried ginger
  • 1/4 cup onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tsp olive oil
  • 1 12 oz coleslaw mix (or broccoli slaw)
  • 3 tbsp soy sauce (or tamari sauce)
  • 1 tsp sriracha sauce
  • 2 green onions (chopped)
  • sesame seeds and cilantro (optional, for serving)

Instructions

  • In a large skillet ad the chicken (or turkey) and cook it on medium until brown.
  • Break it into smaller pieces as it cooks. Cook for 8 minutes or until it's fully cooked.
  • Remove from heat.
  • In the same skillet, add the oil, onion, garlic, and ginger and cook for about a minute or two until fragrant. Add coleslaw mix into the skillet. Add the soy sauce and sriracha sauce too.
  • Cook for another 3-5 minutes until the cabbage is tender.
  • Remove from heat. Portion into bowls, top with green onions and serve immediately!
