Delicious Grilled Mexican-Style Corn

Ingredients

  • 4 ears of corn, husked
  • 1 tsp salt
  • 2 tbsp low-fat mayonnaise
  • juice of 1 lime
  • 1/2 tbsp chilli powder
  • grated Parmesan cheese

Instructions

  • Heat the grill until hot. While heating the grill, bring a pot of water to a boil. Add the corn and the salt and boil for around 5-6 minutes until the corn is slightly cooked.
  • Drain the corn, pad with a towel to make sure it is not wet. Transfer it to the grill.
  • Mix the mayonnaise and the lime juice. Remove the corn from the grill and paint it with the mayonnaise mix, then dust with chilli powder and Parmesan.
  • Serve and enjoy!
