Golden Milk Chia Pudding

Ingredients

  • 1 cup almond milk (or any plant-based milk)
  • 3 tbsp chia seeds
  • 1 tsp turmeric powder
  • 1/8 tsp black pepper
  • pinch of cinnamon and cardamom (optional)
  • 1 small knob of fresh ginger
  • 1 tbsp honey

Instructions

  • In a small saucepan, simmer milk with turmeric, honey, black pepper, cinnamon, cardamom, and ginger. (5-7 min) Remove from heat and let it cool down. Strain the ginger from the milk.
  • Transfer the milk into a jar to make the chia pudding.
  • Add the chia seeds and stir nicely. Cover the jar with a lid and place in the refrigerator to set preferably overnight.
  • Taste and add more honey if desired, Decorate with nuts/seeds or fruits of choice.
