Healthy Baked Oatmeal Cups With Coconut Cream Filling

Ingredients

Oatmeal Cups:

  • 3/4 cup oats
  • 1 banana
  • pinch of cinnamon
  • a small handful of chopped walnuts (optional)

Coconut Cream Filling:

  • 1/2 cup coconut flakes
  • 1 tsp coconut oil
  • 1/2 cup cottage cheese
  • 2 tbsp coconut milk
  • 1 tbsp honey (or maple syrup/stevia)

Instructions

  • Mash the banana and add the remaining ingredients. Mix well, the mixture should be thick. Put the mixture in the cups of a muffin tray and with the help of a spoon or by hand make holes in the middle. Bake in a preheated oven at 350 degrees F for about 20-25 minutes until slightly browned.
  • For the coconut cream filling, add all ingredients in a blender or food processor and mix well. If you use honey you will get a fairly thick mixture like for a cheesecake, and if you use a dry sweetener, add a little extra milk. It all depends on what density you would like to achieve. Fill the baked oatmeal cups with the coconut cream filling.
  • You can also use this cream for a cake. Decorate them on top as desired, you can go with chocolate, fruit or butter.
