Healthy Chocolate Rice Pudding

Ingredients

  • 1 cup white rice
  • 3 cups unsweetened almond milk (or water)
  • 2 tbsp honey
  • 1 tbsp cacao powder
  • 1/2 tsp cinnamon

Instructions

  • Put the almond milk or water on the fire in a non-stick pan, immediately add the rice and stir. In the beginning, even if the water or almond milk boils, it is necessary to stir constantly so that it does not stick. When the water boils, reduce it to low and leave it to boil for 10-15 minutes, stirring occasionally.
  • When the liquid is completely absorbed, add the honey, cocoa and cinnamon and cook for another 3-5 minutes. Serve the hot chocolate pudding in small glass pudding cups. Add some gluten-free whipped cream on top, or some extra chocolate chips if desired.
