Healthy Creamy Semolina Cookies

Ingredients

  • 1 cup nuts mix (I added hazelnuts, almonds, and cashews)
  • 1/2 cup coconut flakes
  • 5 tbsp boiled semolina
  • 1 tbsp tahini
  • 2 tbsp honey
  • 1 tbsp nut butter (I used nut mix butter)
  • 1 tbsp cocoa powder

Instructions

  • Mix all the ingredients together, the nuts need to be finely ground, and the semolina cooked in a standard way only with water (not too much water to be thicker).
    You can form the cookies with your hands and make the shape you want. I wanted to save time so I used a silicone cookie mold.
    Add 1 tbsp cocoa powder in half of the mixture to make a black / white combination.
  • If you want to be a little extra, spread some nut butter or tahini on top and pop them in the fridge for an hour before serving.
