Healthy Raspberry and Chia Seed Jam

Ingredients

  • 200 gr fresh or frozen raspberries
  • 40 gr chia seeds
  • juice of half a lemon

Instructions

  • Put the raspberries in a small saucepan and cook on low heat for about 10 minutes, stirring occasionally.
  • As the berries heat up and cook, they will become softer, so squeeze them with a fork until you get a puree-like mixture
    Then add chia seeds and lemon juice into the fruit and stir nicely to combine.
    Leave on a medium heat for another 15 minutes, until you get a jelly-like mixture. Transfer into a glass jar, let it cool and place in the refrigerator.
    This healthy jam can stay in the fridge for 6-7 days, and in the freezer for much longer.
