Homemade Banana Nut Granola

Ingredients

  • 1 cup nuts (I used hazelnuts and walnuts)
  • 4 cups rolled oats
  • 2 tsp cinnamon
  • pinch of salt
  • 2 ripe bananas (mashed)
  • 1/4 cup maple syrup (honey, agave or coconut sugar work well too)
  • 1/4 cup nut butter (I used almond butter)
  • 3 tbsp melted coconut oil
  • 1 tsp vanilla extract

Instructions

  • Preheat your oven on 350 degrees F.
  • Line a large baking sheet with parchment paper and set aside.
  • Process your nuts into smaller pieces in a food processor or blender and add them to a big bowl. Add the rest of the dry ingredients and stir to combine.
  • In another bowl add the bananas and mash them until you get a nice banana puree. Add the rest of the wet ingredients and mix well.
  • Add the wet ingredients bowl into the dry one and stir well to combine.
  • Add this mixture into the baking sheet and spread evenly into one layer.
  • Bake your granola for 30-35 minutes, or until golden brown and crunchy. Don't forget to stir occasionally.
  • Leave it to cool for a couple of minutes and crush it into granola-like texture.
  • You can keep it in the fridge for up to 2 weeks.
