Mediterranean Homemade Olive Paste Spread

Ingredients

  • 1 cup seedless olives (preferably black)
  • 1 boiled potato
  • 1-2 tsp dry garlic powder (optional)
  • 1 tsp dry parsley
  • 1 tsp lemon juice

Instructions

  • Thoroughly clean the olives from the seeds and chop them in halves or quarters, then chop the boiled potato into small cubes. Put the olives and potatoes in a blender and add the parsley, salt, pepper, garlic and lemon juice. Blend until you get a thick and homogeneous mixture.
  • Store the olive pate in a glass jar and store it in the refrigerator.
