No-Bake Oreo Cake

Ingredients

OREO CRUST

  • 6 cups pre-soaked dates
  • 2 cups coconut flour
  • 2 cups cacao powder (or carob powder)
  • 1 tsp ground vanilla (optional)

FROSTING

  • 5-6 frozen bananas
  • 2.5 cups soaked cashews
  • juice of half a lemon
  • 1 tbsp honey (optional)
  • 1/2 tsp vanilla extract (optional)

Instructions

  • To make the oreo crust, add all ingredients into a food processor and process for about 5 minutes or less, or until you get a doug-like consistency.
  • Line a round cake mold with parchment paper. Then add half of the oreo crust mixture and press with your hands. This will be the bottom part of the oreo cake.
  • To make the oreo frosting, add all ingredients into a blender and blend on high until thick and creamy. (Here, you can be creative and add some date pieces, or raisins, but this is totally optional).
  • Pour this mixture on top of the oreo crust spread it nicely and pop into the freezer for at least one hour to freeze completely.
  • Afterwards, add your remaining oreo crust on top, press with your fingers to make it even. Add it to the refrigerator for an hour or so, and serve! Enjoy!
