Quick and Healthy Quinoa Tomato Salad
Ingredients

tbsp
boiled quinoa
1
tomato
4-5
black olives
1/2
onion
sliced
1
tbsp
olive oil
juice of half a lemon
1/4
tsp
sea salt
chopped parsley
(optional)
Instructions
First, boil the quinoa in water, it is good to let it soak a little, at least 1-2 hours (or if you feel overnight).
When the quinoa is cooked, chop the tomatoes, onions and olives. Season with olive oil, lemon juice, sea salt and a little parsley.
