Quick & Healthy Cheese and Garlic Mayonnaise Spread

Ingredients

  • 2 1/2 cups goat cheese (or some other low-fat white cheese)
  • 5-6 garlic cloves
  • 1/2 cup walnuts (soaked in water for at least 2 hours)
  • 3 tbsp olive oil
  • small handful of chopped parsley
  • salt, pepper, dry basil (to taste)

Instructions

  • Discard the water in which the walnuts were soaked and put them in a food processor, add all the other ingredients in the food processor and blend for 1-2 minutes until you get a nice creamy texture.
  • Store this healthy mayonnaise spread of cheese and garlic in a glass jar and store it in the refrigerator. It goes well with wholemeal bread and wholemeal salty crackers.
