Quick & Healthy Cheese and Garlic Mayonnaise Spread
Ingredients
2 1/2cupsgoat cheese(or some other low-fat white cheese)
5-6garlic cloves
1/2cupwalnuts(soaked in water for at least 2 hours)
3tbspolive oil
small handful of chopped parsley
salt, pepper, dry basil (to taste)
Instructions
Discard the water in which the walnuts were soaked and put them in a food processor, add all the other ingredients in the food processor and blend for 1-2 minutes until you get a nice creamy texture.
Store this healthy mayonnaise spread of cheese and garlic in a glass jar and store it in the refrigerator. It goes well with wholemeal bread and wholemeal salty crackers.
