Super Creamy Italian Tomato Soup

Ingredients

  • 1 pound Italian sausage
  • 1/2 cup diced onion
  • 1 cup diced green onion
  • 1 cup diced green pepper
  • 1 28 ounce can crushed tomatoes
  • 4 cups chicken broth
  • 2 cups water
  • 8 ounces uncooked rotini pasta
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh basil
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded Italian cheese
  • salt and pepper

Instructions

  • In a large pot cook the sausage completely. Drain the excess grease from the pan.
  • Stir in the onions and peppers and cook for 1-2 minutes.
  • Pour in the tomatoes, water and broth. Bring this to a boil.
  • Add the pasta and boil again on low heat until pasta is cooked.
  • Stir in heavy cream, basil and the cheeses and stir until the cheese melts. Season with salt and pepper to taste.
  • Simmer on low heat until it's ready to eat.
  • Serve with fresh basil and cheese, if desired.
