The Best Healthy Energy Bars

Ingredients

  • 1 1/2 cup raw almonds (or any nuts you prefer)
  • 15 medjool dates
  • 1/3 cup raisins (or dried cranberries, apricots, plums)
  • 2 tbsp ground flax seed
  • 2 tbsp milled sesame
  • 2 tbsp coconut flour
  • 1 tbsp coconut oil
  • about a teaspoon of cinnamon (optional)

Instructions

  • Soak your almonds in a bowl for at least 4 hours. Put the dates and soaked almonds in a food processor and blend well, then add the other ingredients and mix well until you get a homogeneous mixture. If the mixture is very dry, add a little water, and if it is liquid, add another 1 tablespoon of flaxseed.
  • Pour the mixture over some parchment paper and shape your energy bars as desired. I made them into squares, but you can make rectangles, or any shape you like.
  • You can sprinkle some coconut flakes on top and wrap each bar in foil. Store in refrigerator for about 2 weeks, or in the freezer up to 2 months.
