Soak your almonds in a bowl for at least 4 hours. Put the dates and soaked almonds in a food processor and blend well, then add the other ingredients and mix well until you get a homogeneous mixture. If the mixture is very dry, add a little water, and if it is liquid, add another 1 tablespoon of flaxseed.
Pour the mixture over some parchment paper and shape your energy bars as desired. I made them into squares, but you can make rectangles, or any shape you like.
You can sprinkle some coconut flakes on top and wrap each bar in foil. Store in refrigerator for about 2 weeks, or in the freezer up to 2 months.
