Vegan Blueberry Muffin Mug Cakes

Ingredients

  • 1 tbsp melted coconut oil (plus extra for greasing)
  • 1/3 cup buckwheat flour
  • 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • pinch of salt
  • pinch of nutmeg
  • 1/2 tsp cinnamon
  • 1/3 cup mashed ripe banana (1 medium banana)
  • 1/3 cup almond milk
  • 1/2 tsp vanilla extract
  • 2 tbsp chopped walnuts (plus extra for topping, optional)
  • 2 tbsp dried or fresh blueberries (plus extra for topping, optional)

Instructions

  • Grease the insides of two microwave-safe mugs with a little melted coconut oil. In a medium-size bowl, mix the flour, baking powder, baking soda, salt, nutmeg, cinnamon, banana, milk, oil, and vanilla. Add the walnuts and blueberries and fold together. Pour the cake batter into the mugs. Top with an extra sprinkle of chopped walnuts or blueberries, if desired.
  • Cook each mug cake in the microwave on high (900 watts) for 1 minute and 30 seconds, turning the mugs halfway through the cooking time if your microwave doesn't have a turntable. If the cake is not cooked through, pop back in the microwave for another 10 seconds.
  • You can make these in the oven too. Just make sure to use oven-safe mugs, and bake them on 350 degrees F, for about 20 minutes.
