Vegan Sweet Potato Cauliflower Soup

Ingredients

  • 1 lb sweet potatoes (peeled, chopped)
  • 1 head cauliflower (chopped)
  • 1 onion (diced)
  • 1 carrot (diced)
  • 5 cups vegetable broth
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp Himalayan salt
  • 4 cloves garlic (peeled, chopped)
  • 1 1/2 cups coconut milk
  • 1/4 cup all-purpose flour

Instructions

  • In a large saucepan, add all ingredients except for the milk and the flour.
  • Cover with a lid and bring to a boil. Cook for 20-25 minutes until the veggies are cooked and soft.
  • In a bowl, mix the milk and flour until well combined.
  • Add this mix to the saucepan and cook until the soup has thickened (around 2-3 minutes)
  • Remove from heat, and blend it with an immersion blender, or divide into batches and blend it in a blender until smooth.
  • Serve in bowls add additional coconut milk on top and eat immediately! Enjoy
