Vegan Sweet Potato Cauliflower Soup

Ingredients

sweet potatoes
(peeled, chopped)

cauliflower
(chopped)

onion
(diced)

carrot
(diced)

vegetable broth

tsp
paprika

oregano

tsp
Himalayan salt

cloves garlic
(peeled, chopped)

coconut milk
1/4
cup
all-purpose flour
Instructions
In a large saucepan, add all ingredients except for the milk and the flour.
Cover with a lid and bring to a boil. Cook for 20-25 minutes until the veggies are cooked and soft.
In a bowl, mix the milk and flour until well combined.
Add this mix to the saucepan and cook until the soup has thickened (around 2-3 minutes)
Remove from heat, and blend it with an immersion blender, or divide into batches and blend it in a blender until smooth.
Serve in bowls add additional coconut milk on top and eat immediately! Enjoy
