Wash the zucchini well and grate it, then season with salt and let it drain. Squeeze the water well through a strainer, then place the grated zucchini in a deeper bowl.
In a bowl with the zucchini, grate the onion, chop the garlic finely, add the egg, olive oil, spices and stir well. While stirring, add the oats, but slowly add spoon by spoon, you can even wait 2-3 minutes for the oats to absorb some of the water. If you have more water left in the zucchini, you may need to add more than 2-3 tablespoons of oats.
When the mixture is thick and can be shaped, make balls and put them in a baking pan lined with parchment paper. Bake for about 30 minutes at 450 degrees F, but make sure they do not burn.
In addition to baked, you can also fry them in a non-stick pan with very little oil. But decide for yourself, and in one way or another they are certainly delicious.
They go well with lettuce, arugula, spinach and cherry tomatoes.
