Dairy-Free Coffee Smoothie

Ingredients

  • 1 cup brewed coffee (chilled)
  • 6-8 medjool dates (pitted, and soft) (soak in water for 15 minutes if not they are not soft)
  • 2 tbsp hemp seeds
  • 2 tbsp cashew butter
  • 2 cups baby spinach (optional)
  • 3 cups ice cubes

Instructions

  • Add all ingredients (except the ice cubes) in a blender. Blend well until the dates are broken down.
  • Add the ice cubes and blend again until creamy and milkshake-like consistency.
  • NOTE: For an extra coffee flavor use previously made coffee iced cubes, instead of regular iced cubes.
