Raw Lemon Coconut Balls

Ingredients

  • 1 1/2 cups almond flour
  • 1/4 cup lemon juice
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/3 cup coconut flour
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 pinch of Himalayan salt

Instructions

  • Firstly, prepare a cookie sheet lined with some parchment paper.
  • In a food processor, add all ingredients and pulse until everything is well combined. The mixture should have a thick and smooth consistency.
  • Take a spoonful of the mixture and roll it into 16 equal balls.
  • (If the mixture isn't firm enough to roll balls, put it in the refrigerator for 15 minutes.)
  • Leave them plain, or roll them into your desired topping.
  • Transfer them to the cookie sheet and place them into the refrigerator for 15-20 minutes before eating.
