Raw Lemon Coconut Balls to Kickstart Your Healthy Eating

Are you looking for a healthy no-bake dessert that will satisfy your sweet tooth, but keep you healthy and low on calories? I might just have the right refreshing dessert, excellent for summer, made with only 8 real ingredients!

The best part? It will only take you half an hour to prepare it! Later, store it in the fridge and snack on these amazingly good raw lemon coconut balls that are simply melting in your mouth.

You can enjoy these balls plain, or if you want to wake your creative side up, feel free to experiment and roll them in almond flour, shredded coconut, or even some powdered sugar.

This recipe makes 16 balls.

Raw Lemon Coconut Balls

Prep Time 10 minutes
Cook Time 30 minutes

Ingredients

  • 1 1/2 cups almond flour
  • 1/4 cup lemon juice
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/3 cup coconut flour
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 pinch of Himalayan salt

Instructions

  • Firstly, prepare a cookie sheet lined with some parchment paper.
  • In a food processor, add all ingredients and pulse until everything is well combined. The mixture should have a thick and smooth consistency.
  • Take a spoonful of the mixture and roll it into 16 equal balls.
  • (If the mixture isn't firm enough to roll balls, put it in the refrigerator for 15 minutes.)
  • Leave them plain, or roll them into your desired topping.
  • Transfer them to the cookie sheet and place them into the refrigerator for 15-20 minutes before eating.

These balls are freezer friendly, so you can make a batch and freeze it!
