Dough ingredients:
- 170 g grated mozzarella
- 30 g cream cheese
- 2 eggs
- 35 grams of coconut flour
Procedure:
- Preheat the oven to 400 degrees and place the baking paper on the baking sheet.
- In a large bowl, mix the grated mozzarella and cream cheese, then put in the microwave for 90 seconds, and stir once after 40 seconds, so that it melts nicely.
- Stir eggs and coconut flour into the cheese mixture. Mix with your palms until you get a uniform and compact dough.
- If the mixture hardens before you have completely mixed it, put it back in the microwave, but only for about 15 seconds to soften it a bit.
- Place the mixture on baking paper and roll it into the desired shape. When rolling out, make a series of holes in the dough to prevent bubbles from forming during baking.
- Place in the oven and let it bake for 6 minutes. Take it out and make holes again with a toothpick if bubbles form somewhere.
- Now place the toppings of your choice on the dough and bake for another 5 minutes, or until the dough gets a nice light brown color.
