Why make this creamy broccoli soup?

Because broccoli is a super healthy food. Just 100 g of broccoli contains only 34 calories, 7 g of carbohydrates (of which 2.6 g are insoluble fiber), 2.8 g of protein and only 0.4 g of fat. Broccoli is an excellent source of vitamin C, vitamin A, vitamin B6, vitamin K and vitamin B9 (folic acid). They also contain a lot of potassium, magnesium and iron.

Studies show that steamed or boiled broccoli contains the most nutrients. This way of cooking is the healthiest and that is why this creamy broccoli soup is a great way of preparing broccoli, while preserving all the nutritional properties.

Healthy Broccoli Creamy Soup

Ingredients

  • 2 cups fresh broccoli
  • 2 medium carrots
  • 1 medium potato
  • 1 vegetable bouillon cube
  • 3 cups water
  • 2-3 garlic cloves
  • 1 tbsp olive oil
  • salt, pepper, chopped parsley
  • 1/2 cup Greek yogurt (or sour cream)

Instructions

  • Chop the broccoli, potatoes and carrots into small pieces.
    Pour the water into a pot on heat and add the cube of soup, then add the vegetables, let them cook for 10 minutes, on medium heat.
  • When the vegetables are soft, blend the mixture with a hand blender. You need to get a thick and smooth creamy structure.
  • Then put the olive oil in a pan on the fire to heat, then add the garlic and fry for 1 minute, then pour the heated oil into the soup and mix well. Finally add salt, pepper and parsley if desired. Remove the soup from the heat and wait for it to cool a bit, then add the yogurt and mix well.
    Serve the soup hot.
