Low-Calorie Gluten Free Lava Cake Recipe

This chocolate lava cake recipe is incredibly simple to make, it’s abundant in chocolate and you can’t help but notice that strong chocolate eruption and lava coming out of your dessert…yum! 🙂
There’s only one trick I find most challenging when making lava cake: the baking time. If you under-bake your lava cakes, the moisture will be so big they will instantly collapse when you remove them from the oven. On the other hand, if you over-bake them, you will likely get less “lava” or no “lava” at all and they will look and taste like regular muffins.
Each oven is different, but at 400 F, or 200 C (at fan), for about 9-10 minutes, and your lava cakes should be perfect!
Low-Calorie Gluten Free Lava Cake Recipe
Ingredients
- 2/3 cup dairy free dark chocolate
- 1/3 cup dairy free spread
- 2 tbsp gluten free flour
- 3/4 cup light soft brown sugar
- 3 eggs
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 400 F. Prepare your mini muffin cups and spread a little dairy free spread in each cup (bottoms and sides).
- Next, microwave your chocolate and dairy free spread until fully melted (for a minute and a half or more). NOTE: Check and stir every 20 seconds to make sure the chocolate does not burn). Allow it to cool for 10 minutes.
- Mix in the brown sugar using a spatula. Add the eggs, one at a time. Add the vanilla and stir nicely. Finish with the gluten free flour. Stir to combine.
- Fill in your muffin cups, about 2/3 full.
- Place in the oven to bake for about 9-10 minutes. Remove from the oven when the edges are firm but squishy and soft in the middle.
- Turn them over on a plate and serve immediately, either plain or with ice-cream! Enjoy!
