OMG guys !! Leave whatever you are doing at the moment, and quickly go ahead and make these CRACKERS in the kitchen! I am so excited about this recipe that I think you must but you MUST try it.

These crackers have been in the making for 2 months with a lot of ups and downs, but finally we have the final recipe. Now you might ask yourself, what is so good about these crackers and I am ready right away with a few arguments that I will share with you immediately:

You probably think I’m dramatic, but you know how much I love a product with good, clean and healthy ingredients and when it all comes down to such a delicious, yet simple final product, it’s my ego boosting moment because once again I am proud to show you how healthy ingredients combined in the right way can make wonders in the kitchen.

These crackers are also lean, vegan, vegetarian, paleo, keto so they suit almost any “diet”. These crackers are also low in carbohydrates so if you pay attention to that – then this is definitely for you.

You can snack on them as a snack, add them to a salad as a substitute for croutons, with spreads like hummus or Greek yogurt and many other variants. You can adapt them to your own taste by changing the spices. You can add turmeric, curry, Mediterranean spices, red pepper, chili or similar and make your own version that will suit you best.

Protein-Packed 5 Seed Crackers

Ingredients

  • 1/2 cup chia seeds
  • 1/2 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1/3 cup flax seeds
  • 2 Tbsp ground flax seeds
  • 4 Tbsp sesame seeds
  • 1 tsp salt
  • 1 tsp spice mix (I used oregano, dill and parsley mix)
  • 1 cup water

Instructions

  • Preheat the oven to 350º F and place parchment paper on a large baking tray. It is very important that it is large for the mixture to be evenly and thinly distributed, for the crackers to bake nicely. If you do not have a large tray, use two small ones and distribute the mixture twice.
  • In a large deep bowl, add all the seeds and spices and stir. Add the water and stir well again. Stir the mixture nicely so there are no seeds left at the bottom of the bowl.
  • Let it set for 10 minutes for the ground flaxseed and the chia seeds to swell and the whole mixture to thicken and make a "gel-like mixture".
  • Transfer the mixture from the pan to the prepared baking tray and distribute and level over the entire surface. My recommendation is to use a rubber spatula because it is easier to smooth and flat the mixture. The cracker mixture would ideally be around 5-6 mm.
  • Bake for 25 minutes. Remove from the oven and cut into small cubes (size is optional) You can use a pizza cutter or a sharp knife for cutting.
    Turn over on the other side to bake evenly and return to the oven for baking for another 15-20 minutes, or until they are completely baked and get a golden color. Baking time will vary from oven to oven so keep an eye on them and check that they do not burn.
    Leave to cool completely before storing in a container or consuming.
  • You can store them in the refrigerator, in a closed container for up to 2 weeks.
