The Ultimate Healthy Eggplant Pizza That Melts in Your Mouth

I love pizza more than anything and I could always eat it. I know I’m not the only one.

I can eat it in a restaurant sometimes, I like to make it at home as well, but most of all I like to try out healthier versions.

One that I’ve made more than once this summer is this delicious eggplant pizza. The filling is the same as on a classic pizza (which you can always upgrade according to taste) while the base is eggplant.

It is also the only food you have to deal with during preparation, but it is nothing complicated. It will all pay off in the end. Take my word for it. If today is your pizza day, then this is a great opportunity to test this recipe.

The Ultimate Healthy Eggplant Pizza

Ingredients

  • 1 eggplant
  • 1 tsp Himalayan sea salt
  • 3 tsp olive oil
  • 1/4 tsp oregano
  • 10 leaves fresh basil
  • 30 g freshly grated Parmesan (1/4 cup)
  • 50 g Mozzarella cheese
  • 3 garlic cloves
  • 400 g peeled and chopped tomatoes

Instructions

  • Wash the eggplant well and cut into slices two inches thick. Arrange them on paper towels, sprinkle with salt on both sides and wait for the towels to absorb the excess liquid.
  • Meanwhile, heat two tablespoons of olive oil and sauté the finely chopped garlic. Then add the tomatoes, spices as desired and cook until thickened. With a fork, stir the tomatoes to get a salsa-like sauce.
  • When the eggplant releases excess liquid, gently wipe it with a paper towel to pick up any remaining liquid.
    Line a baking sheet with baking paper, arrange the eggplant rings, cover them with a little olive oil and spices.
    Bake them for 20-25 minutes in an oven preheated to 400 degrees F. Meanwhile, finely chop the basil leaves and mix them with the diced parmesan and mozzarella.
  • Remove the eggplants from the oven, place the tomato sauce, basil and cheese mixture previously prepared on each roll.
    Bake everything together for another seven minutes, until the cheese melts and takes on a golden color.
