Cauliflower Steaks With Sour Cream Dressing

Ingredients:

  • 1 cauliflower, medium size
  • 1/2 teaspoon salt
  • olive oil or oil of your choice for baking
  • chopped parsley
  • pomegranate for serving (optional)
  • crunchy chickpeas

Sour cream dressing:

  • 3 tablespoons sour cream or Greek yogurt
  • 2 tablespoons tahini
  • 6 tablespoons olive oil
  • juice of one lemon
  • 1/2 teaspoon salt
  • 1 teaspoon cumin

Method of preparation:

  1. Preheat the oven to 400º F and prepare a baking tray.
  2. Cut the cauliflower into vertical pieces, add a little oil and salt enough to cover all the pieces.
  3. Place them on the baking tray in a row, so that the pieces do not overlap.
  4. Bake for 30 minutes. Turn them over half the time to be evenly baked on both sides.
  5. For the dressing, add all the ingredients in a blender until you get a creamy, liquid texture. Try and adapt the
  6. ingredients to taste. If necessary, add a little water to dilute.
  7. Add the cauliflower to a serving plate, add the crunchy chickpeas, pomegranate seeds, a little parsley and finally the dressing.
