Grilled Zucchini Roll Ups with Goat Cheese and Salsa
Zucchini is a universal food with which you can always make wonders. Somehow they are just adaptable to everything, they fit in almost any combination and no matter how you treat them they will mostly always taste fine π
This recipe is one of those that I like to serve to friends at home gatherings. It is easy to prepare, it looks nice, and it is also nice for the eyes when you make roll ups.
Well, the next time unexpected guests come over to your home, you can surprise them with these goat cheese rolls. Let me tell you one thing for sure, enthusiasm and praise will certainly not be lacking at the dinner table!
Grilled Zucchini Roll Ups with Goat Cheese and Salsa
Servings: 2
Time: 10 minutes
Ingredients:
- 2 zucchini
- 4 tablespoons olive oil
- 200 g of fresh goat cheese
- 750 g of fresh tomatoes
- 2 sprigs of basil, thyme and oregano
- 3 tablespoons white balsamic vinegar
- salt and pepper
Procedure:
- Wash the zucchini, clean them and cut them lengthwise into thin slices. Coat them with a tablespoon of oil and toast on a grill pan.
- Mix the fresh goat cheese with salt, pepper and a little finely chopped herbs.
- Arrange the cheese on a thin slice of zucchini, roll and fasten with a toothpick if necessary. Repeat with the rest.
- To make the homemade salsa sauce, pour boiling water over the tomatoes, remove the skin and seeds, and cut them into cubes.
- Mix the vinegar with three tablespoons of oil, salt, pepper and the rest of the herbs and mix with the tomatoes.
- Arrange the salsa on plates and place two rolls of cheese on each. Garnish with herbs and serve.
