Sugar-Free Moist Banana Bread

If you haven’t tried banana bread yet – I don’t think there is a better time than NOW. This recipe is easy, with minimal ingredients and one of my favorites.

It is important to note that this bread does not contain any added sugar other than natural banana sugar, which makes it even more ideal for me, considering that I avoid too much sugar, especially for breakfast.

If you are not a bread person, or if you are looking for something milder, I have another recipe for banana muffins where, in addition to bananas, there is also honey, so maybe it would be ideal for you.

However, I strongly recommend you to try this sugar-free banana bread recipe and enjoy it warm with your favorite topping or coffee!

Sugar-Free Moist Banana Bread

Ingredients:

  • 3 medium-sized bananas
  • 2 eggs at room temperature
  • 65 gr. almond butter
  • 60 gr. coconut flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • chopped hazelnuts, coconut or chocolate pieces for decoration and topping

Method of preparation:

  1. Preheat the oven to 350º F and line a baking tray with parchment paper.
  2. Mash the bananas with a fork until you get a puree
  3. Add them in a deep bowl together with the almond and egg butter. Stir until combined and a creamy mixture is obtained. If you want you can also use a mixer for this procedure for a more creamy mixture and a simpler procedure.
  4. Add the rest of the ingredients into the mixture (except for the toppings). Stir well again
  5. Add the mixture to the baking tray and level the surface with a spatula. Shake the tray a few times left-right to distribute evenly on all sides. If you use toppings, now is the time to add them to the surface and lightly press to attach to the surfaces of the bread.
  6. Bake for about 30-35 minutes or until a toothpick inserted in the middle of the loaf pops out clean without the remaining mixture.
  7. Allow to cool before removing from pan and cutting into slices.
  8. Serve warm and enjoy!
