The Ultimate Vegan Tahini Raw Nut Bars
Whenever I am craving something extra nutty and crunchy, I usually eat some nut butter with fruits. This time, I decided to spice things up a little bit, and create some no-bake nut bars with tahini. Let me tell you, these bars will become your ultimate favorite treat you won’t be able to resist! I know they are for me, at least!
Super crunchy and chewy at the same time, amazing flavor combinations that make your mouth watery whenever you think about them! Don’t worry if you are super busy, as these raw bars will be ready in minutes! Need I say more? Let’s dive into the recipe!
Vegan Tahini Raw Nut Bars
Ingredients:
- 60 g almonds
- 65 g hazelnuts
- 65 g walnuts
- a little salt
- 2 tablespoons coconut flour (or 4 tablespoons finely ground desiccated coconut flakes)
- 1 teaspoon cinnamon
- 60 g tahini
- 85 g honey
- 2 tablespoons coconut oil, melted
Procedure:
- Add the almonds to a food processor and pulse until a floury texture is obtained.
- Hazelnuts and walnuts are finely chopped with a knife into small pieces. You can also use a food processor but make sure not to grind too much. We are looking for crunchy pieces and not flour texture.
- Heat a frying pan over medium heat and add the ground almonds, chopped walnuts and hazelnuts, cinnamon, salt and coconut oil.
- Stir constantly until the ingredients are simmered for about 3-4 minutes.
- Add the honey, stir and remove the pan from the heat.
- Add the mixture to a deep bowl, add the remaining ingredients and stir again.
- The mixture will be quite thick so use your hands to mix it more easily and combine all the ingredients.
- Coat a pan (I used a baking tray) with baking paper for easier removal when the mixture has hardened. Any tray can be used because it will not bake, we only need it to shape the bars.
- Add the mixture to the pan and press to level and evenly distribute. I recommend using a cup or a hard object for even better results and even distribution.
- Leave to harden in the fridge for at least 1 hour, then remove the mixture from the pan and cut into cubes or rectangles if desired.
NOTES and TIPS
Hazelnuts and walnuts can be replaced with any other nuts. Almonds can also be replaced with other nuts but must be ground as written in the preparation procedure.
Bars can be stored in the refrigerator for up to 2 weeks or in the freezer for up to 2 months.
Tahini can be replaced with any other nut butter.
