Easy to Make Homemade Instant Noodle Bowl That is Gut-Friendly

The combination of the fresh ingredients will give you a perfect lunch/dinner option when you lack the time, but still want to have a good meal option.
I am making this soup for the whole family and it takes less then half an hour for the whole process, and everybody loves it!

Homemade Instant Noodle Bowl
Servings 1
Ingredients
- 1/4 cup diced carrot
- 1 ounce thin rice noodles (or rice vermicelli)
- 1/2 cup shredded bok choy
- 1/2 cup diced cooked chicken (or tofu)
- 2 tbsp corn (fresh or frozen)
- 2 tbsp chopped scallions
- 1 tsp soy sauce
- 1/2 tsp chile puree
- 1/2 tsp crushed ginger
- 1/4 tsp garlic oil
- 1/4 tsp low-FODMAP chicken or vegetable bouillon powder
- 1 1/2 cups boiling water
- lemon juice squeezed
- sprinkle fresh cilantro
Instructions
- First, cook the carrot for 1 minute and 30 seconds on high speed in the microwave.
- In a bowl, place the carrot, noodles, bok choy, chicken or tofu, corn, scallions, soy sauce, chile puree, ginger, oil, and bouillon powder
- Ten minutes before eating, add the boiling water, cover and let it sit for 10 minutes. The noodles should be just cooked. If not, add them to the microwave for only 1 minute.
- Season with fresh cilantro and a squeeze of lemon. Enjoy!
