No-Bake Maple-Walnut Oatmeal Snack Bites

While searching for a healthier cookie option, I came up with this mouth-watering recipe that is loaded with carbs and protein and super nutritious and filling!

Just like any snack bites, you can freeze these balls and snack on them whenever you feel like you need some extra energy boost.

They will only take half an hour to make, they are gluten-free and vegetarian friendly.

Not to mention, your kids will love these so much, you’ll probably have to hide them in the freezer 🙂

I usually make 4-6 batches at one time! Don’t make the trouble of doing the math, it’s around 100 balls at a time. These snack bites are that awesome, I kid you not.

Let’s dive into the recipe.

No-Bake Maple-Walnut Oatmeal Snack Bites

Prep Time 20 minutes
Servings 24 balls

Ingredients

  • 1 cup walnuts
  • 1 1/4 cup quick oats
  • 1/2 cup ground flaxseed meal
  • 1/2 cup chopped dates
  • 1/4 cup coconut
  • 3 tbsp maple syrup
  • 2 tbsp chopped walnuts
  • 1 tbsp honey
  • 1 tsp vanilla
  • a pinch of salt

Instructions

  • Use a food processor to process walnuts into a walnut butter (about 2 minutes).
  • Place the walnut butter in a bowl and add the rest of the ingredients.
  • Stir well to combine.
  • Using your hands form one-inch balls.
  • Place them into an air-tight container and refrigerate them until serving.

Of course, you can always play with the recipe and add other nuts instead of walnuts. Or even add chocolate chips for a more chocolaty flavor. Be creative and enjoy cooking!
