Watermelon is an amazing fruit to add to your menu, especially if you want to burn some extra fat and lose weight. It is full of water (more than 90% water) and it contains 1/3 of the recommended daily dose of vitamins A, C, and potassium. Seriously, if you were not so keen on watermelon this season, why not use the last days of summer to pack your body with some extra vitamin boost?

This recipe serves 4-6 people, and you can combine it with whatever you like, but I am sure this salad will be on your table more than once!

Balsamic Watermelon Salad

Servings 6

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 tsp Himalayan salt
  • 1/2 tsp ground black pepper
  • 6 cups diced watermelon
  • 1 cup fresh blueberries
  • 1/4 cup fresh mint leaves chopped
  • 1/2 cup crumbled feta cheese

Instructions

  • In a large salad bowl, add watermelon, blueberries and mint leaves. Top with oil, balsamic vinegar, salt and pepper and mix well.
  • In the end add feta cheese on top and serve! Enjoy!
