The combination of coconut and mango and the creaminess created by the soaked oats is simply delicious! Once you try this easy brekky option you won’t go back to your regular oats!

You can use both frozen and fresh mango chunks, either way it will taste great. This recipe is made with cow’s milk, however, feel free to substitute any plant-based milk and make it a vegan version!

Creamy Coconut Mango Overnight Oats

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup milk
  • 1 tsp chia seeds
  • 1/2 cup diced mango
  • 1 tsp shredded coconut
  • 2 tsp honey (optional for sweetness)
  • pinch of salt

Instructions

  • First add the oats in a jar. Add a pinch of salt.
  • Next, pour over the milk, and stir well.
  • Add the rest of the ingredients and stir to combine.
  • Place it in the fridge overnight.
  • Take it out the following morning and enjoy either cold or warm.
