Crispy Paleo Chicken Tenders
Recreating fast food into food made from healthy and complete nutritional ingredients is my favorite hobby. I’m not kidding. It may be a sad hobby but I enjoy every moment. Not only am I amazed at how healthy and tasty it can actually be, but I also want to show you that a healthy diet is anything but boring and monotonous.
We all know the well-known taste of chicken tenders and maybe this version is not exactly the same but at least you know what you are getting into the body and it will not leave you with that “blah” feeling and bloating.
Instead of breadcrumbs here we will use crushed almonds which I believe you all know how amazing and beneficial they are and instead of frying them in deep burnt oil – we will put them in the oven and they will not lose their crunchiness.
I combined them with potatoes (in the oven) and lettuce, and you are free to combine them with your favorite toppings. A Greek yogurt sauce or guacamole would go great with this dish. Crispy Paleo Chicken Tenders
Ingredients:
- 500 gr. chicken breasts (about 3 pieces) chopped into thin strips
- 1 tablespoon olive oil
- 2 tablespoons lemon juice
- a little salt and pepper
- 1 egg + 1 teaspoon water
For crispiness:
- 50 gr. ground almonds
- 1 teaspoon oregano
- 1 teaspoon dried parsley
- 1½ teaspoon red pepper
- 1½ teaspoon garlic powder
- 1½ teaspoon salt
Method of preparation:
- Preheat the oven to 400 ° F and prepare a baking pan. If you use a non-stick pan, just add a little oil. If using an ordinary pan, place baking paper.
- Add the chicken breasts to a bowl, pour over the olive oil and lemon juice and “massage” so that all the pieces are evenly covered.
- Add a little salt and pepper and stir again.
- In a small bowl, add the egg and water and stir with a whisk to combine the egg whites and yolks.
- In a separate bowl, add all the baking ingredients and stir.
- Each piece of chicken is added first in the egg mixture and then in the baking mixture and shaken to drop the extra.
- Place it on the roasting pan and repeat the procedure with the other pieces of meat. Place the pieces of meat so that they have space between them.
- Bake for 10 minutes, turn over and bake for an additional 10 minutes (20 minutes in total).
- Serve with your favorite topping or salad and enjoy!
