Easy and Quick Low-Carb Crispy Chicken

Crispy chicken doesn’t always have to be deep fried, with loads of unhealthy fats and calories. Instead, I will show you how you can prepare it in the healthiest way and still get the same flavor!

This quick lunch/dinner recipe won’t take more than 30 minutes of your time, it is super low in carbs, and it is a great make-ahead recipe. It is best served with steamed veggies, but of course you can make your own combo.

This crispy chicken meal is not only simple to make, bit it will fit into a keto diet perfectly! The flavors in the dish, like lemon, thyme, and tomatoes, are common notes in the cuisines that inspire the Mediterranean diet, which this dish fits into, too!

Low-Carb Crispy Chicken

Ingredients

  • 4-5 bone in skin-on chicken thighs
  • 2 tbsp olive oil
  • salt and pepper to taste
  • 1/2 cup cherry tomatoes
  • 1 medium lemon thinly sliced
  • 6 springs of fresh thyme

Instructions

  • Preheat your oven to 400°F. Arrange the rack right in the middle.
  • Rub the chicken thighs with 1 tablespoon oil and salt and pepper.
  • Heat a 12-inch cast-iron skillet over medium heat and add the remaining oil. Cook your chicken thighs with the skin side down for 15 minutes, until the fat has rendered out. Turn the heat off, add the tomatoes, and swirl around the rendered fat. Flip the chicken thighs so they are skin side up. Add the lemon slices and thyme sprigs over the chicken, and transfer the skillet to the oven. Roast for 18 minutes.
