Healthy Double Chocolate Buckwheat Brownies
Lately, this brownie recipe has been on my dessert table for more than once, so I thought why not share it with you guys?
I know, surely some of you will raise an eyebrow when they see beans in the ingredients. But beans actually work great in desserts. It is quite neutral, so you can use it for various biscuits and cakes, and many, for example, add it to chestnut puree to increase the amount of puree.
This recipe is gluten-free and vegan, if you use maple syrup instead of honey. Adjust the spices to your own taste, and feel free to add a little rum.
If you are a chocolate lover, I strongly suggest you to try this recipe as the strong decadent chocolate flavor of these brownies will definitely make you crave them every hour. Super chewy and rich, every bite is a special treat you will enjoy!
Double Chocolate Buckwheat Brownies
Ingredients:
- 3 flax-seed eggs (3 tablespoons ground flax + 9 tablespoons water)
- half a cup of buckwheat flour
- half a cup of dried cranberries (instead of berries, you can use nuts in this recipe too)
- a few tablespoons of maple syrup or honey
- half a teaspoon of stevia
- 1 can of red beans (250g beans without liquid)
- 1 banana
- half a teaspoon of cinnamon
- 1 teaspoon of cocoa powder
- 1 tablespoon of vanilla extract
- half a cup of chopped dark chocolate or almonds
- melted chocolate with coconut milk (for topping)
Preparation:
- Add the ground flax seeds in a small bowl and pour water over it, mix well and let it release its mucus.
- Rinse the beans.
- Mix the banana, red beans and honey (if using it) and blend in a blender.
- Then mix the dry and wet ingredients, add the chopped cranberries/nuts and chocolate (almonds) to the mixture and press into a mold that have previously been lined with parchment paper.
- Bake for 30 minutes at 170C, or 330F.
- If you want, you can make a chocolate glaze by melting 100 g of dark chocolate with 70% cocoa and adding 100 ml of coconut milk. Pour the glaze over the brownies and put in the refrigerator for at least 2 hours to set.
- Cut the desired brownie bars and enjoy!
