Healthy Grilled Curry Chicken Salad that is Perfect for a Weight Loss Dinner
Considering the amount of weight we all might have gained during this quarantined period, I decided to create a perfect recipe to help you shed those pounds more easily.
Yesterday I made this salad with grilled chicken, and I added baby spinach, avocado, beets, walnuts and feta cheese. It is so refreshing and filling at the same time! My whole family loved it.
To be honest, once you try this salad, I doubt you’ll ever forget it! Not to mention it’s super healthy and high on protein, so your body will thank you for treating it right!
Healthy Grilled Curry Chicken Salad
NOTE: Adjust the amounts according to the number of servings you are creating. I made 2 portions with the following ingredients.
Ingredients:
- 1 large chicken breast (thinly sliced into two pieces)
- 1 tbsp. curry spice
- 1 avocado
- 1 beet
- a handful of walnuts
- a little feta cheese
- olive oil
- 2 handfuls baby spinach
- salt
- lemon juice
Procedure:
- Roast the chicken breast seasoned with curry on a grill pan.
- Wash the baby spinach and drain it well and put it in two separate bowls.
- Then add the diced beets, walnuts and pieces of feta cheese.
- Peel a ripe avocado (soft to the touch) and cut it into slices, put in a bowl.
- Cut the finished chicken fillets into smaller pieces and add them to the bowls.
- Season everything and serve cold.
