Healthy No-Bake Coconut Chocolate Brownies With a Twist
A really tasty dessert prepared from quality, selected ingredients, with a “surprise” ingredient that you might not expect in a cake at- sweet potato puree! Sweet potato puree has a sweet taste and is great for combining the brownie mixture of this cake, and with the aromas of cocoa and peanut butter, it forms the backbone of the taste of this fit sweet delicacy.
The contrast to the chocolate part is given by the color and taste of the upper, coconut layer, which has a slightly harder consistency – but it is precisely this contrast of colors, consistency and taste that makes this dessert a top treat for everyone!
Another virtue of this cake is that you don’t even have to light the oven for it.
Healthy No-Bake Coconut Chocolate Brownies
Ingredients:
“Brownie” part:
- 75 g (1 cup) coconut flour
- 60 g (1 cup) cocoa powder
- 1 scoop of chocolate whey protein
- 225 g (1 cup) peanut butter
- 80 g agave syrup
- 230 g (1 cup) sweet potato puree
- 4-5 tablespoons oat or almond milk
Coconut part:
- 80 g of coconut chips, processed in a blender
- 75 g coconut oil
- 2 tablespoons agave syrup
Preparation:
- For the brownie layer, mix the following ingredients in a larger bowl: coconut flour, cocoa, chocolate whey protein, peanut butter, coconut syrup, sweet potato puree and oat milk. The mixture will be very thick, and if it is just so thick that it cannot be mixed, add a little more oat milk, as needed.
- When the mixture is combined, spread it on a sheet measuring 8×8 inches lined with baking paper. Flatten the mixture and place in the refrigerator while you prepare the second layer.
- For the “coconut” layer, mix processed coconut chips, melted and cooled coconut oil and coconut syrup. Arrange everything on the first layer and put in the fridge for about 2 hours.
- Then cut the cake into cubes and enjoy.
- * We make sweet potato puree by cooking peeled orange sweet potatoes cut into cubes in boiling water until they soften. Then drain it, cool briefly and blend with a stick mixer or in a kitchen blender into a puree.
