Low-Calorie Italian Tomato Soup For Weight Loss

Tomatoes are currently the most common vegetable on the market. They are great for preparing a refreshing salad on hot summer days. The list of nutrients in tomatoes is really long, they are rich in vitamins: A, C and K. Their red color is derived from the antioxidant lycopene, which helps with inflammation and lowers cholesterol.

Medium-sized caloric tomatoes contain about 40 kcal. Apart from cooking tomatoes as a fresh salad, they go well with any dish.

Here’s my favorite Italian soup recipe – low-calorie tomato soup. This soup is a great low-calorie meal for lunch or dinner, especially for those on a healthy diet wanting to lose weight.

Low-Calorie Italian Tomato Soup

Ingredients

  • 2 lbs fresh tomatoes
  • 2 garlic cloves (diced)
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 1 tsp pepper
  • a couple leaves of fresh basil
  • 1 tbsp wholemeal flour
  • 1 potato (peeled and chopped)
  • 500 ml water

Instructions

  • Peel the tomatoes first and chop them into small pieces. Peel the potato as well, and chop it into small pieces.
  • Add the flour and olive oil in a saucepan on medium heat and cook for a few seconds, then add the chopped tomatoes and potatoes.
  • Mix well and add the water, cook for about 10 minutes on low heat. Then add the salt, black pepper and garlic and simmer for another 15-20 minutes (make sure the potatoes are completely soft).
  • Finally, decorate with fresh basil leaves and enjoy. (If you want a thick and uniform mixture, you can use a blender and blend the whole soup well.)
