The Scent of Autumn: Moist and Delicious Pumpkin Muffins

Autumn scents can really be special and nostalgic. We decided to mark the beginning of the new season the other day with these moist and delicious pumpkin muffins. The fact is that we really like muffins, and these have really proved themselves.

As we did not eat them in one day, which is very unusual, the next day with coffee they were equally soft and rich in taste. You don’t have to bother too much about them, they are equal to the classic ones in preparation.

Well, if you like the taste of pumpkin in the sweet version, definitely treat yourself with this recipe.

Moist and Delicious Pumpkin Muffins

Ingredients:

  • 200 g grated carrots
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 tablespoon birch sugar, or coconut sugar
  • 30 g butter
  • 100 g of pumpkin flour
  • 2 tablespoons flaxseed flour
  • 1 teaspoon baking powder
  • a pinch of salt
  • pumpkin seeds

Preparation:

Grate the carrots. Then add two eggs, birch sugar and a pinch of salt in a bowl and mix everything well.

Melt the butter in a pan and add it to the mixture.

Now mix dry ingredients. Add the pumpkin and flaxseed flour and baking powder into the wet ingredients. Mix everything well until you get a nice compact dough texture.

Arrange the dough nicely in muffin tins. Add some pumpkin seeds to the top of each muffin and place them in the oven previously preheated to 350 degrees Fahrenheit.

Bake them for about 15 minutes.

You can serve the muffins as they are or add some filling of your choice.
