Cauliflower Steaks With Sour Cream Dressing
Ingredients:
- 1 cauliflower, medium size
- 1/2 teaspoon salt
- olive oil or oil of your choice for baking
- chopped parsley
- pomegranate for serving (optional)
- crunchy chickpeas
Sour cream dressing:
- 3 tablespoons sour cream or Greek yogurt
- 2 tablespoons tahini
- 6 tablespoons olive oil
- juice of one lemon
- 1/2 teaspoon salt
- 1 teaspoon cumin
Method of preparation:
- Preheat the oven to 400º F and prepare a baking tray.
- Cut the cauliflower into vertical pieces, add a little oil and salt enough to cover all the pieces.
- Place them on the baking tray in a row, so that the pieces do not overlap.
- Bake for 30 minutes. Turn them over half the time to be evenly baked on both sides.
- For the dressing, add all the ingredients in a blender until you get a creamy, liquid texture. Try and adapt the
- ingredients to taste. If necessary, add a little water to dilute.
- Add the cauliflower to a serving plate, add the crunchy chickpeas, pomegranate seeds, a little parsley and finally the dressing.
