The Ultimate Spinach and Cheese Breakfast Pie
I know that for many, the idea of “pie” is exclusively related to puff pastry. But if you still crave this dish, and prefer healthier variants, then I am sure that what follows will satisfy your stomach.
This, let’s call it a “healthy and tasty” pie is juicy, crunchy, tasty and very easy to prepare! Enjoy!
Spinach and Cheese Breakfast Pie
Ingredients for the crust:
- 280 g almond flour
- 1/2 teaspoon salt
- 50 g coconut oil (melted)
- 1 large egg
Ingredients for the filling:
- 450 g frozen spinach (thawed and strained)
- 230 g of crumbled feta cheese
- 115 g cream cheese
- 55 g mozzarella (chopped)
- 4 cloves garlic (tinned)
- 1 tablespoon fresh dill (chopped)
- 4 large eggs
Procedure:
- Preheat the oven to 350 degrees F and place parchment paper in the pan. The mixture is suitable for a round pan with a diameter of 9×9 inches.
- In a larger bowl, mix the almond flour and salt.
- Add the melted coconut oil and scrambled egg and stir until completely combined. The mixture will be quite dry, but keep stirring until the mixture becomes uniform.
- Place the mixture in the pan and squeeze it along the bottom and along the edges so that you get an edge.
- Place in the oven and bake for 10-12 minutes, until the crust gets a nice golden-brown color.
- While the crust is baking, in another bowl, mix all the ingredients for the stuffing except the eggs. Only when you have mixed everything, add the previously beaten eggs, then stir further.
- When the crust is done, take it out of the oven and pour a mixture of eggs and spinach into it, then return it to the oven.
- Bake for 30-40 minutes, or until the middle part hardens and bakes.
- When done, remove, allow to cool slightly then cut into triangles and enjoy this version of the spinach pie.
